Today, we bring you three extraordinary spices from Middle Eastern cuisine to this blog, which are present in our dishes and lend incomparable aroma and flavour to recipes: cumin, sumac, and za'atar.

Cumin
Cumin, a spice with a warm, earthy, and intense flavour, is a key ingredient in many Middle Eastern cuisines. Originating from the Mediterranean region, cumin flavours dishes we prepare at El Miracle such as falafel and hummus. It can be found whole or ground, contains antioxidant and anti-inflammatory properties, and is a great source of iron.
Sumac
Sumac, known for its distinctive red colour and slightly tart flavour, is a spice that is very present in Arabic cuisine. It brings a unique and fragrant nuance to dishes. It is traditionally used to season salads, grilled meats or stews. At El Miracle, we use it to add a vibrant acidity that balances our dishes and enhances the fresh flavours of the ingredients.
Za'atar
Za'atar is a herb mixture that varies by region but usually includes thyme, oregano, toasted sesame seeds, and often sumac. It's a perfect addition for seasoning bread, vegetables, meats, or fish.
