Thus, the article highlights how our establishment has revolutionised the gluten-free culinary scene in the Valencian Community, its culinary idiosyncrasy, and the adaptation process that was developed to ensure a space free from cross-contamination and completely safe for all customers.
“The first 100 % gluten-free restaurant in the Valencian Community, certified by ACECOVA (the Valencian Community Coeliac Association) to confirm this status, is located in the Algirós district, on Calle Campoamor.” This is how the Guía Hedonista introduces the feature in which Hiba Malek and Nazir Hanna, the managers of El Miracle, who explain in detail the process of certifying the restaurant as a 100% gluten-free establishment: “We had to make a great effort to avoid cross-contamination. We wanted to ensure our customers were safe, but by adapting all the dishes, we didn't have to remove any.” So, they got to work in search of suppliers who offered a gluten-free equivalent of their raw materials.
